Tortang talong (eggplant with minudo)
(picture is taken by me after I finished cooking,I included the fried fish)
ingredients:
1/4 ground beef/pork
diced carrots
diced potato
2 eggs (scramble)
minced garlic
minced onion
salt
ground pepper
2 tbsp cornstarch(mix with eggs)
2 tbsp oil
1 tbsp soy sauce
procedure:
first: cook the eggplant
grill the eggplant until it is cooked
peel the skin of the eggplant and set aside
2nd part: cook the meat with carrots and potato
saute onion and garlic in hot cooking oil
add the groundbeef or pork. when the meat is cooked,add carrots and potato,then add 2 spoon of water. add ground pepper,salt and soy sauce
3rd part: combine part 1&2
dip the grilled eggplant on the eggs. add it on the wok with hot cooking oil(2 tbs oil). add the ground meat on top(as toppings).then add egg 4-5 tbsp around toppings.(if you desired)
